Chefs knife bag

"Chefs Knife Bag (Roll-up)", where else are you going to store and carry those insanely nice food prep knives you've bought? These pics are a bit older so I offer my apologies. This particular piece was custom made for a chef in Belgium. His wife was looking for something that none of his buddies had so she called me ... from Belgium! Don't mind the knives, not a good as professional chef's use but they work fine for me and my tries at cooking good stuff. This is a particularly large piece as it is designed to carry 20 different knives and roll up into a "hang off your shoulder" bag to carry from kitchen to kitchen or home to kitchen. As you may know good chef's do not leave their knives at work. Many of us carry a brief case back and forth to work, chef's carry knives.  Rolled up the bag uses leather ties to become 30" long x 4-7" in diameter depending on how many knives you carry. Unfolded and laid out it is approximately 30" x 36" not including the leather flap that folds over to protect the knives and keep them in place. The roll-ups exterior is made of 2-3oz. drum dyed leather so is soft, supple and tough. The interior is 4-5 oz. butterscotch suede which, although is not "point proof" is damn near close. I would suggest storing the knives as seen in other photos with the point side up. This protects the bag itself and keeps the knife blades from retaining moisture. As well suede will absorb a bit of moisture and dry rather quickly. As a point of information, never put wet knives in any knife bag or roll-up. Make sure they are clean and dry and when possible open the bag up fully to allow better drying. The various photos will give you an excellent indication of the rugged construction of the bag. The thread utilized is heavyweight nylon to maintain the bags integrity. This bag can be made as large or as small as you'd like it. It can be made to hold 3 knives or 40 (although I'm not sure anyone would need to carry 40 chef's knives). Price, not cheap simply due to the amount of leather used and the time it takes to manufacture. Base price for a 9 knife bag is $375.00 and goes up from there depending on the size, the leather and the hardware used. Call me, lets build a chef's roll-up.  DH

The above Chef's Knife roll-up is one of a set of seven that I created for a chef in Jackson Hole, Wyoming. As I can gather an awards dinner is coming up soon and these roll-ups will be given to a select group of Chef's as an award for outstanding work. The main differences in this bag vs. the larger bag at the top is that it is designed to carry 9 knives vs. 19. I also utilized a 3-4oz. piece of vegetable tanned tooling leather for the outer shell. I as well maintained the butterscotch suede lining as it just seems to work so well. I did change the way the top pouch is connected to the bottom pouch and it works very very well. This gives you an opportunity to see yet another variation for carrying your top-end knives to and from work. If you have any other ideas you'd like to run by me, just let me know.  DH
